Banana Bread – The Thomas Bros. – Christopher Thomas (10) and Jayson Thomas (8)

  1. 3 very ripe bananas, peeled and mashed_mg_1944
  2. 1/3 cup melted butter
  3. 1 cup sugar
  4. 1 egg, beaten
  5. 1 tsp vanilla extract
  6. 1 tsp bicarbonate of soda
  7. 2 pinches salt
  8. 1 ½ cups all purpose flour

 To serve:

  • Handful of dried bananas
  • Handful of pecan or walnuts
  • 2 bananas_mg_1911
  • Lump of butter for frying
  • Honey to drizzle
  • Vanilla ice cream


  1. Preheat oven to 175 degrees Celsius
  2. Grease a 4×8 inch loaf tin and line with baking paper
  3. Put dried bananas and nuts into a Ziploc bag and crush with a rolling pin
  4. In a mixing bowl, mash the ripe bananas till smooth
  5. Stir in the melted butter
  6. Mix in the bicarb and salt
  7. Stir in the sugar
  8. Sitr in the beaten egg and vanilla extract_mg_1992
  9. Mix in the flour
  10. Pour the batter into the prepared loaf tin
  11. Sprinkle with the dried banana and nut crumb
  12. Cover with foil and bake for 20 minutes
  13. Remove foil and bake for another 20 minutes or until a skewer inserted comes out clean
  14. Remove from the oven and allow to cool before turning out and slicing.
  15. Serve with banana halves fried in butter and honey and vanilla ice cream
