Gourmet chicken burger with sweet potato fries – The Cook Kings – Tallen Schutte (8) and Daniel Uys (12)

  • 2 deboned and skinned chicken breasts
  • 2 brown-seeded bun
  • 1 round of camembert cheese
  • 1 punnet blueberries
  • 1 red onion, sliced
  • 75g rocket, rinsed
  • one large sweet potato, peeled and sliced into chips
  • olive oil
  • rock salt and pepper

 Basting: 

  • 2 Tbsp. lime juiceimg_1466
  • 2 Tbsp. worcester sauce
  • 2 Tbsp. red wine vinegar or balsamic vinegar
  • 2 Tbsp. brown sugar

Sauce:

  • 125ml sour cream
  • Chives, chopped

 METHOD:

  1. Preheat oven to 180 degrees Celsius
  2. Mix the basting ingredients together and spread over chicken breasts.
  3. Leave to marinade for at least half an hour
  4. Toss the sweet potato chips in olive oil. Season with salt and pepper and put onto a baking tray
  5. Bake in the oven for 20 minutes till soft and golden
  6. Preheat frying pan to medium heatimg_1421
  7. Remove chicken from marinade and fry gently on both sides till done, basting occasionally with marinade mixture
  8. When cooked, start plating.
  9. Cut rolls in half. Pile on rocket, onion rings and blueberries. Top with chicken breast and slices of camembert
  10. Plate with sweet potato chips and a dollop of sour cream with chives
