RED VELVET CUPCAKES – The Nerdy Nummies – Sabastien (10) & Scarlett (11)


  • 2 cups flour
  • ¼ cup cocoa powder
  • ½ tsp baking soda
  • 115g butter
  • 2 cups sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup sour cream
  • ½ cup full cream milk
  • 1 ½ tbsp. red food colouring

 For the frosting:

  • 250g cream cheese, softened
  • ¼ cup of butter, softened
  • 2 Tbsp sour cream
  • 2tsp vanilla extract
  • 500g icing sugar


  1. Preheat oven to 180 degrees C
  2. Line 24 cups of 2 muffin trays with paper liners
  3. Mix together flour, cocoa powder, baking soda and salt
  4. With an electric mixer, beat butter till creamy and add sugar. Beat until light and fluffy_mg_0626
  5. Add eggs and vanilla extract. Beat well
  6. Add sour cream and milk. Beat well
  7. On a low speed, add flour mixture until incorporated
  8. Mix in red food colouring
  9. Spoon batter into prepared cupcake papers
  10. Bake for 10 to 12 minutes until a skewer inserted comes out clean
  11. Remove from oven and aallow to cool while you make the frosting
  12. For the frosting:
  13. Beat cream cheese, butter, sour cream and vanilla in a large bowl till light and fluffy
  14. Gradually beat in sugar till smooth
  15. Pipe onto the cooled cupcakes and serve
