- 500g spiral noodles
- 500g mixed seafood (defrosted)
- 4 Tbsp olive oil
- 2 red peppers, deseeded and cut into strips
- 4 leeks, washed well and cut into strips
- 2 large onions, peeled and cut into thick wedges
- 300g cherry tomatoes, halved
- 4 garlic cloves, peeled and thinly sliced
- A Few sprigs of fresh coriander
- 4 tsp balsamic vinegar
- Salt and pepper to taste
METHOD
- Cook noodles according to instructions on the packet. Drain and set aside.
- Heat oil in the pan
- Fry onions for 3 to 4 minutes, add garlic and peppers and fry for another 2 minutes
- Add leeks and fry for 1 minute
- Add seafood and fry for 3 to 4 minutes before adding tomatoes.
- Stir through noodles, season to taste and finish with the coriander sprigs and a drizzle of balsamic vinegar
