GRANNY’S APPLE SHORTCAKE – No Cooking Clue – Filipe (9) and Jacob (8)

  • 125g butter, softened
  • 75g golden castor sugar
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 eggs
  • 150g self-raising flour
  • ½ tsp baking powder
  • 2 red apples, cored and sliced

METHOD

  1. Preheat oven to 180 degrees C
  2. Grease a 20cm loose bottomed cake tin
  3. Cream together butter, sugar, cinnamon and vanilla
  4. Add the eggs and half the flour and the baking powder. Mix to combine
  5. Add the remaining flour and mix well
  6. Spoon half the mixture into the cake tin and spread evenly
  7. Scatter half the apples over the mixture
  8. Top with remaining batter and top with apples in a neat circle
  9. Bake for about 40 minutes till risen and golden
  10. Remove from oven and leave to cool
  11. Remove from cake tin and place on a wire rack to cool completely
  12. Decorate and serve
