INGREDIENTS
- 125g butter, softened
- 75g golden castor sugar
- ½ tsp ground cinnamon
- 1 tsp vanilla extract
- 2 eggs
- 150g self-raising flour
- ½ tsp baking powder
- 2 red apples, cored and sliced
METHOD
- Preheat oven to 180 degrees C
- Grease a 20cm loose bottomed cake tin
- Cream together butter, sugar, cinnamon and vanilla
- Add the eggs and half the flour and the baking powder. Mix to combine
- Add the remaining flour and mix well
- Spoon half the mixture into the cake tin and spread evenly
- Scatter half the apples over the mixture
- Top with remaining batter and top with apples in a neat circle
- Bake for about 40 minutes till risen and golden
- Remove from oven and leave to cool
- Remove from cake tin and place on a wire rack to cool completely
- Decorate and serve
